Oven Baked Lamb

Ingredients
  • 1\2 Lamb
  • Garlic
  • Salt
  • Laurel
  • Thyme
  • White wine or sherry
  • Olive oil
  • A little water.
Description:

First of all season the lamb, then put the garlic and thyme in a mortar and add a little water.

The lamb is then mixed with the mixture obtained. Place the lamb prepared in this way in an earthenware casserole of Pereruela with striae and water with wine or sherry with about 250ml plus another 200ml of water.
To finish, add a few bay leaves and a good amount of olive oil.

The casserole is introduced in the oven previously heated during approximately 45min. This is one of the most famous and typical recipes of Pereruela's ovens.
